Tiranga Dhokla Shots
The soon approaching 69th
India’s Independence Day inspired me to create and share this Tri-Colored Gujarati
snack with a twist.
We have a diverse culture yet united
just like the snack; I tried using diverse flavors and unite them in a single
dish. Hence, I gave these Khatta Dhokla’s
three different colors with flavors. The
green has pudina flavor, white with ginger and the orange with garlic and red
chillis.
You can make a Dhokla batter
using urad dal and rice which is exactly same as the idli batter.
I am serving these Dhokla’s in
an unconventional manner in small shot glasses.
These Tiranga Dhokla’s are perfect tea time and party snacks.

Ingredients:
For White
layer
1 Cup Idli batter
1 tsp Ginger green chilli paste
1 tsp Curd/Yogurt
½ tsp Oil
Salt to taste
1/4th Fruit salt
For
Green Layer
1 Cup Idli batter
1 tsp Hari chutney (Dhania chutney)
1 tsp Curd/Yogurt
½ tsp Oil
Salt to taste
1/4th Fruit salt
For
Orange Layer
1 Cup Idli batter
1 tsp Schezwan sauce (You can even use tomato chutney!!!)
1 tsp Curd/Yogurt
½ tsp Oil
Salt to taste
1/4th Fruit salt
Tempering
1 tbsp Oil
1 tsp Mustard seeds
Few curry leaves
Method:
Before making the Tri-colored dhokla mix keep the idli
steamer or cooker ready.
For
White layer:
Mix together dhokla batter, ginger green chilli paste, curd,
oil and salt.
Add fruit salt mix gently.
Fill the idli mould’s and
steam for 7 to 10 minutes.
For
Green Layer :
Mix together dhokla batter, hari chutney, curd, oil and
salt.
Add fruit salt mix gently.
Fill the idli mould’s and steam for 7 to 10 minutes.
For
Orange Layer :
Mix together dhokla batter, Schezwan sauce, curd, oil and
salt.
Add fruit salt mix gently.
Fill the idli mould’s and steam for 7 to 10 minutes.
Ignore the date I made them today !!
Tempering
Heat oil add mustard seeds.
Once they crackle add the curry leaves.
Presentation:
Cut all the dhokla’s round in shape to fit your shot glasses
Place green dhokla in the glass as first layer
Top it up with hari chutney
Place white dhokla on top of the green layer
Top it up with Schezwan sauce.
Place the orange dhokla
Top the dhokla shots with the tempering.
