FLAX SEEDS PODI/CHUTNEY
Flax
seeds, also known as 'alasee ka beej' in Hindi is one of the most powerful plant foods on the planet. They are rich in omega 3 fatty acids which
are a source of good fat, lignans which have estrogen and antioxidant qualities
and fiber.
Flax
seeds can be used as whole seeds or can be powdered. Always roast flax seeds before
powdering. Store the flax seeds powder
in an air tight container in a dry place as it tends to oxidize and spoil very
quickly. Infact it is advisable to make
flax seeds powder in small qnatities.
Flax
seeds can be added to smoothies, oatmeal, granola, cakes or muffins podis or
can be added to sabzi. Flax seeds can be
used wherever nutty flavor is required.
Always remember to add flax seeds powder towards the end to the dish as
it can thicken the dish if left for a long time.
Flax
seeds podi is blend of flax seeds, channa dal, garlic,red chilli and
cumin. I have used channa dal for some
texture but you can totally skip using it.
It is very simple to prepare and tastes great with rotis, rice, dosa,
idli, also can be added to sabzis for that extra nutty flavor.
After
blending you will notice that the podi forms a lump mainly because of the oils
present in flax seeds; let it rest for some time and it will be dry again.

Ingredients:
1 cup flax seeds
¼ cup channa dal
6 to 7 dried red chillies
5 cloves of garlic with skin on (optional)
½ tsp jeera/cumin seeds
1/4th tsp asefeotida /hing
Salt to taste
Method:
Dry roast flax seeds till
it starts to splutter. Keep aside.
Dry
roast channa dal till it starts turning slightly brown.
At
this stage add the cumin seed and dried red chillies and continue to roast for
a minute.
Now add the garlic and
roast for few seconds.
Remove and cool down all
the ingredients.
Grind all the ingredients
along with salt and asafoetida to slightly coarse powder.
Store flax seeds
podi/chutney in air tight container and it stays good for 2 weeks.
Make this podi in small
batches as powdered flax seeds tend to oxidize and spoil quickly.
