SABUDANA KHICHDI


Sabudana khichdi is a popular fasting/vrat/upvas food, as it is rich in complex carbohydrates, digests slowly, and thus, does not give any feeling of hunger. Sabudana is used in dishes like sabudana vada, kheer and papad.
Sabudana or sago is tapioca pearls also known as sagu biyyam (Telugu), javarisi (Tamil), shaabakki (Kannada) is available in small and big varieties.

Here’s simple fasting/vrat/upvas sabudana khichdi recipe.  If not fasting you can add onions.


Preparation Time    : 10 minutes + 6 hrs soaking time
Cooking Time            : 10 mins
Serves                          :  2
Ingredients:
·         1 cup sabudana/sago
·         ½ cup roasted peanut powder
·         1 diced boiled potato(big)
·         4 green chillis chopped
·         1 tsp cumin seeds
·         1 ½ tsp ghee
·         Salt to taste
·         Chopped coriander leaves

Preparation:
Wash sabudana under running cold water till water runs clear and soak it in enough water for 5-6 hours or overnight.   Sabudana doubles in size and becomes fluffy after soaking.  Drain out all the excess water as it will make the khichdi soggy.
Method:

Mix soaked sabudana, roasted peanut powder and salt and keep aside.

Heat oil in a pan, add cumin seeds and let it crackle.

Add chopped green chillis and diced boiled potatoes; cook for 3 to 4 minutes.

Add the sabudana mixed with peanut powder to the pan. Mix well and cook for 7 -8 minutes until turns translucent.
Add chopped coriander and mix well.Serve hot sabudana khichi for breakfast, lunch or as a snack during a fast.
