SPINACH CHEESE CORN
SAMOSA
Holi is a festival of colors, celebrates the
arrival of spring, fun times with loved ones and lip smacking food.
Indian festivals are synonymous with food and during Holi samosas, kachoris and
gujiyas are the most popular delicacies. Samosa is one such versatile Indian
snack which can be prepared in many different ways, well it can be said that
imagination is the key. Spinach Cheese Corn Samosa is a fusion
samosa recipe with a crispy green pastry stuffed with oregano, flavored with
the succulent sweet corns, spinach, and gooey cheese. Spinach Cheese
Corn Samosa can also be prepared using store-bought spring roll sheets
as well. All you need to do is prepare the filling to stuff inside the samosa
pastry. But in Spinach Cheese Corn Samosa Recipe the outer pastry
is also prepared from scratch using the spinach puree.

Ingredients
for Samosa Dough:
1 cup all-purpose flour
1 teaspoon oil
a pinch of salt
3 to 4 tablespoon spinach puree (make a smooth puree without using
water)
Ingredients
for Samosa Filling:
1/2 Cup boiled sweet corn kernels
2 tablespoon spinach blanched & chopped
2 tablespoon mozzarella cheese grated
2 tablespoon processed cheese grated
1/2 teaspoon garlic finely chopped
1 green chili finely chopped
1/2 teaspoon crushed black pepper
1/4 teaspoon oregano
Salt to taste
Oil for frying
Method:
Knead soft dough with all-purpose flour, oil,
salt using spinach puree.
Cover and rest the dough for half an hour.
Make a paste with a teaspoon of all-purpose
flour and water. This paste will be used to seal the samosa edges. Set aside.
In a bowl mix boiled corn, chopped spinach,
mozzarella, processed cheese, chopped green chilli, garlic, oregano, salt and
pepper. Stir to combine.
Divide the dough into equal parts.
Dust the kitchen surface with flour and each
portion of dough into paper thin sheets.
Cook the sheets for 10 seconds on each side over
a pre-heated griddle. Ensure that no brown spots appear
Cut them into long rectangular sheets with
approximate width of 3 inches.
Fold the sheet into a cone/triangle, stuff the
filling and seal the samosa edges carefully with the flour paste. Any gaps may
lead to oozing out the stuffing.
Heat oil in a frying pan over medium-high heat.
Fry the spinach corn cheese samosa until crispy
on both the sides.
Serve Spinach Corn Cheese Samosa warm.
