ORANGE CAKE RECIPE
(Gluten free, grain free, egg less and vegan)
I love fruits and of all fruits I am crazy about oranges!!! I have a
complete party when orange season starts, I can have atleast half a dozen
oranges in a day, that’s how crazy I am about oranges….
With Chennai heat making us stay indoors weekend afternoons tent to get
little boring so one such afternoon just to kill some time I decide to bake an
orange cake, as I had some Tropicana orange juice on hand and then the
realization dawns that my pantry is lacking very basic ingredients like wheat
flour, turmeric, etc. Well this is what
happens when you refuse to come out of holiday mood….
Nevertheless I decided to use besan or gram flour to make the orange
cake. I was little skeptical initially
but when my husband gave a big thumbs up that meant the cake was good.
While eating the cake the thought dawned on to me that it’s a vegan,
gluten free, grain free and eggless cake and its butter free too. Sweetness can be adjusted as per your liking
but it better to go easy with sugar if you are using packaged orange
juice. I did not have fresh oranges but
adding the orange zest to the cake can take this cake a notch higher, I had to
make do with some orange essence.

Here goes the recipe for super soft, spongy, orangey and moist orange
cake.
Preparation Time : 20
mins
Baking Time : 25 minutes
Makes : 6”

Ingredients:

1 cup Besan/Gram flour/Garbanzo flour
·
1 cup orange juice
·
1/4th cup oil
·
1/4th cup powdered sugar
·
½ tsp orange essence
·
½ tsp baking powder
·
½ tsp baking soda
·
A pinch of salt
Preparation:
Preheat
the oven for 10 minutes at 180 degrees.
Method:
Mix well orange juice and
powdered sugar.
Add oil and orange essence.
Sift the gram flour, baking
soda, baking powder and salt.
Mix the dry ingredients
with the wet ingredients.
Fold in the mixture
carefully so that no lumps are formed. (Do not over mix)
Let the mixture rest for 2
to 3 minutes. In the mean while grease
and dust the 6” baking tin.
Pour the cake batter in the
greased tin and gently tap on kitchen counter to get rid of air bubbles.
Bake the orange cake for 25
minutes at 180 C.
Poke a skewer or tooth pick,
if it comes out clean then the cake is completely done and if not then continue
to bake for few more minutes by keeping a close eye.
Let the cake cool down
completely.
Dust the cake with some
powdered sugar.
Serve orange cake with some
hot tea.
