EASY BANANA BREAD
Banana bread brings some wonderful childhood memories when my mother would bake this
for me and my brother and almost all of the banana bread would be polished off
within minutes of serving.
Banana bread/cake is one such recipe which is very easy to prepare and you know it is
going to taste good. Unlike few cake
recipes where you need to beat the eggs till frothy this recipe does not
require much elbow grease, just combine all the ingredients together, bake and
dig in!!!

Ingredients:

1.5 cups all-purpose flour/wheat flour
·
3 big ripe bananas mashed
·
½ cup sugar powdered sugar.
·
1 egg
·
5 tbsp oil
·
1/4th cinnamon powder (optional)
·
1 tsp vanilla essence
·
1 tsp baking soda
·
A pinch of salt
Method:
Preheat
the oven at 170 C.
Grease
and flour the cake pan.
Sift
together all-purpose flour, salt, cinnamon powder and baking soda.
Mash the ripe bananas.
Add egg, vanilla extract and
powdered sugar to mashed bananas and mix well.
Start adding the sifted flour
to the wet mix in 3 batches. Fold in the dry
ingredients gently without over mixing.
Pour the cake batter into the
cake pan and tap on the kitchen counter few times to release the air bubbles.
Pop the cake pan into the oven
and bake for 25 minutes at 170 C. Keep a
close eye since every oven is different so your banana bread might get ready
before the set time.
Insert the toothpick in the
center of the bread to check whether it is fully cooked or not. The toothpick should come out clean, if not
continue to bake for few more minutes.
Unmould the banana bread after
slightly cooling it down for 10 to 15 minutes.
Serve Banana Bread warm with a nice hot cup of tea/coffee.
Note:
To make egg less banana bread,
replace egg with 1/4th cup of yogurt/curd.
