ATTA HALWA/KADA PRASHAD

Kada Prashad/Atta Halwa is the most divine sweet which you can find at Gurudwaras.  I have always loved the kada prashad, during my childhood while we were staying at Jabalpur I used to accompany a friend during her Gurudwara visits just to eat the  kada prashad.

It is very hard to replicate the divine taste of kada prashad/atte ka halwa given at gurudwaras but I tried and must say made a fairly successful attempt at it.

Serves                                  :  2-3
Ingredients:
·         1/2 cup atta/whole wheat flour
·         ½ cup sugar
·         1/4th cup ghee/clarified butter
·         1 cup hot milk/water
·         3 tbsp slivered almonds (optional)

Method:

On a low flame, heat the ghee in a deep heavy bottom saucepan/vessel. 

Add the atta/whole wheat flour to hot ghee and fry on a low heat.  Keep stirring continuously to avoid atta sticking to the bottom of the pan. Once the atta starts getting roasted a nice aroma arises and also the color of the atta changes slightly. It will take approximately 5-7 minutes. 

Simultaneously dissolve the sugar in the hot milk/hot water and keep aside until required.

Now slowly start pouring is the hot milk sugar/water sugar solution to the roasted atta.

Stir continuously to avoid forming lumps.

Atta will thicken very quickly.

Add slivered almonds and stir until the atte ka halwa leave the pan.  This might take maximum of 2 minutes.

Serve Kada Prashad/Atte ka Halwa hot garnished with some more slivered almonds.
