TUTTI FRUITTI
HALWA
Tutti Frutti Halwa is one more variation of sooji halwa or rava kesari. I prepared this halwa as one of the offerings
during this year’s Navaratri.
Tutti Fruitti Halwa somewhat tastes like pudding with vanilla flavor and tutti
fruitti. Also I reduced the quantity of
ghee and added in milk to get a rich taste and texture.

Serves : 4
Ingredients:

1 cup sooji/rava/semolina
·
3/4th cup sugar (add more if you
like it really sweet!!!)
·
4 tbsp ghee
·
1 tsp vanilla extract
·
1/4th cup tutti frutti
·
3 cups of hot milk
Method:
On
a low flame, heat the ghee in a deep heavy bottom saucepan/vessel.
Add
the sooji/semolina/rava to hot ghee and stir fry on a medium heat. Keep stirring continuously to avoid semolina
sticking to the bottom of the pan. It
might take 4-5 minutes.
Simultaneously
dissolve the sugar in the hot milk and keep aside until required.
Now
slowly start pouring is the hot milk sugar solution to the semolina.
Stir
continuously to avoid forming lumps.
Add
vanilla extract and stir again.
Semolina
will start absorbing the milk and swell up at this stage add tutti frutti.
Keep
stirring at regular intervals until the tutti fruitti halwa starts to leave the
saucepan edges.
Serve
the Tutti Frutti halwa warm or at
room temperature.
