HEALTHY DATE
CARDAMOM CAKE
I
made this delicious healthy Date Cardamom Cake for my parent’s wedding
anniversary. I kept the recipe very
simple and tried to make it as healthy as possible. I used whole wheat flour, olive oil and dates;
dates give the cake sweetness and also the rich caramel flavor. You can use either cardamom powder or
cinnamon powder the spices flavor the cake delicately and add life to it. I used sugar free in the cake but you cake
replace it with some jaggery or date puree.
Date
Cardamom cake is an excellent tea time cake.

Ingredients:

1 1/4th cup whole wheat flour/atta
·
3/4th cup warm milk
·
1 tbsp sugar free or any artificial sweetener
of your choice
·
1/4th cup olive oil
·
½ cup chopped soft pitted dates
·
3 tbsp chopped nuts
·
Pinch of salt
·
½ tsp lemon juice
·
½ tsp baking powder
·
1/4th tsp baking soda
·
½ tsp cardamom powder
Preparation:
Pre-heat the oven at 170C.
Grease and dust
the cake tin.
Add the lemon
juice the warm milk and set it aside for 5 minutes.
Sieve together the
dry ingredients twice.
Toss the dates and
nuts in tablespoon of whole wheat flour.
This step will prevent the dates
and nuts from sinking to the bottom of
the cake.
To the milk
mixture add the sugar free, cardamom powder & olives and give a good stir.
Add the dry
ingredients in 3 batches and combine all the ingredients gently.
Add the dates and
nuts and gently fold them into the batter.
Pour the prepared
batter into the cake pan.
Sprinkle some more
dates and nuts on top of the cake.
Bake the Date
Cardamom Cake at 170C for 35- 40 minutes.
Cool the cake
slightly before serving.
Serve the healthy
Date Cardamom Cake with a hot cup of tea.
