SOOJI KA HALWA/SHEERA
Sooji Halwa/Sheera is the most uncomplicated Indian sweet recipe and also a perfect recipe
for beginners who want to make something sweet for their loved ones.
Sooji Halwa is one Indian sweet dish which will never let you down and every time
turns out perfect, the only trick is to keep the measurements in mind and you
have a no fail sooji halwa.
Sooji Halwa is also known as Sheera in
Maharashtra and Gujarat and Rava Kesari
or Kesari Bhat in South of
India. To make the sooji halwa rich one
can add milk instead of water.
Sooji Halwa paired with Chana and pooris are offered as Ashtami Prasad during Navaratri in North India. It is also offered to Lord Satyanarayana
Swamy during the holy Satyanarayana
Pooja/Vratham.

Serves : 4
Ingredients:
·
1 cup sooji/rava/semolina
·
3/4th cup sugar (add more if you
like it really sweet!!!)
·
½ cup ghee/clarified butter
·
4 to 5 cardamom seeds powder
·
8 to 10 cashews broken into pieces
·
1.5 to 2 tbsp raisins/kissmiss
·
2 cups of water
Method:
On
a low flame, heat the ghee in a deep heavy bottom saucepan/vessel.
Simultaneously
in 2 cups of boiling water dissolve the sugar in the water and keep the sugar
solution on simmer over low heat till required.
Once
the ghee is hot add broken cashew nuts and fry until golden brown and also fry
the raisins until they swell and keep them aside.
Add
the sooji/semolina/rava to hot ghee and stir fry on a medium heat. Keep stirring continuously to avoid sooji
sticking to the bottom of the pan. Stir
frying will take approximately 5 to7 minutes (it might take even longer if you
want a golden brown color).
Now
slowly and very carefully (there are chances that it might splutter) start
pouring the hot sugar solution to the sooji.
Star
stirring the mixture to avoid the sooji from forming lumps.
Sooji
will start absorbing the sugar solution and swell up at this stage add fried
cashew nuts, raisins and cardamom powder.
Keep
stirring at regular intervals until the sooji ka halwa starts to leave the
saucepan edges.
Serve
the Sooji Halwa garnished with dry
fruits to your near and dear ones.
