EGGLESS GOLDEN YELLOW CAKE | CUSTARD POWDER CAKE


Eggless Golden Yellow Cake is an incredibly moist, tender and perfect for any occasion; serve it with tea or dress it up with some chocolate frosting and turn it into a beautiful cake for a special occasion. 


Baking a beautiful golden yellow cake has been on my baking wish list for a while now and like always with my baked goodies I wanted it to be eggless; not that I am vegetarian or a vegan but I enjoy making eggless cakes.



While I was searching for a perfect recipe I came across an eggless yellow cake recipe posted on a website ‘Divinetaste’.  I followed the recipe with just a minor change instead of butter as mentioned in the recipe I used oil and this change definitely did not affect the texture of the yellow cake; it came out perfect.  My husband likes tutti frutti in cakes so I had to add it.  The cake gets beautiful sunshine yellow color from the custard powder, which also happens to be the superstar ingredient in this yellow cake or custard powder cake. 


To keep the top of the cake golden yellow I covered the cake with aluminum foil after 20 minutes of the baking.  I also baked it at 160C which is lower than the temperature normally I would bake.  Those who do not have an oven do not get disheartened you can very easily bake this beauty in a pressure cooker or in a saucepan.  I used an 8”x 4” loaf tin but any 7” or 8” cake tin should be fine.

Makes                          :  8” x 4" loaf
Ingredients:
·         1 ½ cups of all-purpose flour or maida
·         ½ cup vanilla custard powder
·         ¾th cup sugar
·         1 cup milk
·         2 tsp (leveled) baking powder
·         1/4th tsp (leveled) baking soda
·         1 tsp vanilla extract
·         1/3rd cup vegetable oil
·         1/4th cup tutti frutti (optional)

Preparation:

Pre-heat the oven at 160C.

Grease and dust the cake tin or loaf tin.

Heat the milk and dissolve the granulated sugar.  Keep aside for the milk mixture to cool down.

In the meanwhile, sift all the dry ingredients together.

To the dry ingredients add the tutti frutti and mix gently.

Add vanilla extract to the cooled down milk mixture and stir well.

Now add the vegetable oil and stir.

Start adding the dry ingredients to the wet ingredients and start folding in with a spatula.  
Add the dry ingredients in 2 batches.  Do not over mix the yellow cake batter.

Pour the cake batter in the prepared cake tin.

Tap it gently on kitchen platform to release any air bubbles.

Place the cake tin in a preheated oven and bake for 45 – 50 minutes at 160C.

Insert a toothpick or knife at the center of the cake, if it comes out clean , the cake is baked perfectly.

Cool, down the cake completely before cutting it.
