PALAK SOYA NUGGETS CURRY | PALAK SOYA WADI SABZI


Palak Soya Nuggets Curry is a spicy, creamy and a very nutritious North Indian style curry.  It is inspired by the classic Punjabi palak paneer recipe.


Spinach/Palak is powerhouse of Iron and soya nuggets, great source of protein and dietary fiber.  The combination of these two makes a flavorful side dish for parathas or flatbreads.

Serves/makes           :  3
Ingredients:
·         1 big bunch of spinach/palak or 4 cups chopped spinach
·         ½ cup soya nuggets/soya wadi
·         2 green chilies
·         1 onion finely chopped
·         6 cloves of garlic finely chopped
·         ½” piece of ginger, grated
·         ½ tsp cumin seeds (0ptional)
·         1 tbsp ghee
·         ½ tsp garam masala powder
·         3 tbsp warm milk
·         Juice of ½ a lemon
·         Salt to taste

Method:
Soak the soya nuggets/wadi in hot water with some salt in it for 20 minutes.

Boil 3 cups of water with salt.

To the boiling water add the spinach/palak and cook for 3 minutes.

Strain the cooked spinach/palak and immediately drop it into a bowl full of ice cold water.  

This step will help retain the natural green color of the spinach.

Strain the spinach and blend the blanched spinach/palak with chopped green chilies to a very smooth puree.  Keep it aside until required.

Squeeze the water from soaked soya nuggets/wadis and keep them aside.

Heat a pan and add ghee.

To the hot ghee add cumin seeds, let them crackle.

Now add finely chopped onions and fry till onions turn soft and translucent.

To this add chopped garlic and grated ginger.  Fry for 30 seconds.

Now add the spinach/palak puree and salt; cook for 4-5 minutes on medium flame.

Add some water to form a gravy.  Cook for few more minutes, stirring occasionally.

When the gravy starts to boil add the soaked soya nuggets/soya wadi and garam masala powder.

Cook on a medium flame for 5 minutes.

Add lemon juice and give it a good stir and switch off the flame.

To finish off the palak soya curry ;add milk and mix well.

Serve Palak Soya Curry with hot parathas.

Tips:
Replace the soya nuggets with paneer/tofu/potatoes/kabuli chana.
